Sugar Shack Chili


1 1/2 cups bacon and/or small ham chunks, fried crisply
2 quarts tomato sauce
1 small onion, chopped
5 medium shallots, chopped
1 cup fresh Jerusalem artichokes, diced
1 15-ounce can kidney beans
2 cups potato puree
2 cups L. Mawby M. Foch wine
2 tablespoons dried parsley
1 tablespoon thyme
1 tablespoon oregano
3 tablespoons chili powder
4 tablespoons maple syrup

Combine all ingredients in a pot. Heat to boiling, then simmer for 45 minutes to 1 hour. A good hearty meal to be enjoyed when making maple syrup. Sugar Shack Chili can be kept for hours, even days, in a sugar shack.
