You will need 3 brown paper lunch bags. This makes a great gift presentation!

Ingredients
1/3 cup warm water
2 pkg active dry yeast
4 cups all-purpose flour
1/2 cup sugar
4 large eggs
2 large egg yolks
1 teaspoon vanilla extract
3/4 cup (1-1/2 sticks) unsalted butter
2 cups mixed dried and candied fruit
zest of 1 lemon
zest of 1 orange
canola oil, for bowl
2 Tablespoons melted unsalted butter, for paper bags
1 large egg yolk
1 Tablespoon heavy cream
Optional: Black Star Farms Spirit of Pear*

Instructions
Warm a small bowl by rinsing it with hot water. Pour in warm water, and sprinkle 1 package yeast on it. Let stand until yeast has dissolved. Stir in 1/2 cup flour, cover and let stand until doubled, approximately 30 minutes. Then sprinkle remaining yeast over warm milk until dissolved.

Beat together sugar, 4 eggs, 2 egg yolks and vanilla. Mix in yeast-milk mixture, then add the yeast-water mixture and stir well.

With an electric mixer with paddle attachment, combine 3/4 cup butter and remaining flour until crumbly. Slowly pour in egg mixture, beat on high until long strands form, approximately 3 minutes. Add the fruit and zests and beat. Place dough into an oiled bowl and cover with plastic wrap, leave in a warm place to rise until doubled, approximately 2-3 hours.

Fold down bag tops to form a 3-inch cuff and brush inside and out with melted butter.

Place dough on a lightly floured board and knead a few times to deflate. Divide into three pieces, roll each into a ball and drop into prepared bags. Place on baking sheet about 4 inches apart and cover loosely. Again place in warm area to rise until doubled.

Heat oven to 400 degrees. Carefully cut an X on top of each loaf. In a small bowl, whisk 1 egg yolk and heavy cream to make a wash and brush each loaf with wash. Bake 10 minutes, then lower heat to 375 degrees and bake for 30 additional minutes.

*Omit 1 Tablespoon of water while making the sponge. When adding the sponge to the mixture, replace with 1 Tablespoon of Black Star Farms Spirit of Pear.

Makes 3 small loaves.
