Eileen’s Strawberry Salad


From Brys Estate Vineyard & Winery

1/2 lb. bibb lettuce or mixed greens
2 cups sliced fresh Michigan strawberries
2 oz. toasted almonds (toast in a small skillet until lightly browned)

1/2 cup reduced fat mayo
1/4 cup unsweetened orange juice
1 tsp. sugar
1 tsp. poppy seeds

Combine dressing ingredients in a small bowl and whisk until well blended. Store in refrigerator. Gently toss greens and strawberries in a large bowl. Add dressing and toss gently. Add toasted almonds and toss.

Variation: Add grilled or poached chicken breast slices to serve as a meal.

Serve with a glass of Brys Bubbly
