Eileen’s Baked Penne


From Brys Estate

box of penne noodles
28 ounce jar of spaghetti sauce (Eileen prefers Paul Newman’s, your choice of flavor)
1 tablespoon olive oil
1 pound of lean ground beef
1 small onion, chopped
2 cloves garlic, chopped fine
1/2 tablespoon basil
1/2 tablespoon oregano
salt and pepper to taste
1/2 cup red wine
16 ounces ricotta cheese or small curd cottage cheese (or combination)
1 egg
1/2 cup grated Asiago or grated Parmesan cheese
16 ounces shredded mozzarella cheese

Cook noodles according to package directions for the lesser time recommended. Brown garlic and onion in olive oil. Brown ground beef with the onion and garlic and drain fat.

Add sauce, basil, oregano, salt and pepper to taste. Add red wine. Let simmer for two hours for flavors to mix. Mix together egg, ricotta or cottage cheese and the Asiago or Parmesan cheeses.

After sauce has simmered, mix with pasta and pre -heat oven to 350 degrees. In a 9 x 13 pan, start with a layer of pasta and sauce. Next put a layer of the cheese sauce and half of the shredded mozzarella. Add another layer layer of noodles and sauce. Top with the remaining shredded mozzarella. Bake for 30 to 45 minutes or until bubbly.
