From Peggy Core, Suttons Bay, L. Mawby Vineyards
2 quartered frying chickens
1/2 cup olive oil
1 large minced onion
1 clove minced garlic
1 teaspoon salt
3/4 teaspoon pepper
1 medium diced tomato OR 1/2 cup drained canned tomato
1/2 cup L. Mawby Sandpiper wine
Brown chicken in olive oil. Sprinkle with onion, garlic, salt and pepper. Cover and simmer 30 minutes. Add tomato and wine. Simmer an additional 30 minutes or until chicken is tender.
Serve with L. Mawby Sandpiper.
