A nice general guideline for wine and food pairing is that salty and spicy foods go well with low-alcohol, fruity wines. This pairing from Chateau Chantal is the perfect embodiment of that idea. A fruity, semidry red, served chilled, is the perfect balance for the salty bacon and slight sweetness of tomato.
BLT Bite Recipe:
24-30 cherry tomatoes
1 lb bacon, cooked and crumbled
1/2 cup mayonnaise or salad dressing
1/3 cup chopped green onion
3 tablespoons grated Parmesan cheese
2 tablespoons snipped fresh parsley
Cut tops off tomatoes. Use a small metal spoon to scoop out pulp and discard. Invert tomatoes on paper towels to drain. Combine remaining ingredients. Spoon mixture into tomatoes. Refrigerate several hours. Watch them disappear!
