Certa Family Best-Ever Butter Cookies
2 sticks butter, room temperature
1 cup granulated sugar
3 egg yolks
1 1/2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
Day 1: Cream butter. Add sugar, egg yolks, vanilla and flour until ingredients come together in a dough ball. Wrap dough ball in waxed paper and chill at least four hours (or preferably overnight).
Day 2: Preheat oven to 350 F. Using a floured dough cutter, cut dough ball in half. Put half of the dough back in the refrigerator and roll out the other half to about 1/4-inch thick. Using cookie cutters, cut out shapes and place on ungreased cookie sheet. Bake 10 minutes. Sprinkle immediately with colored baking sugar or sprinkles, or cool completely to frost (recipe follows).

Proportions all depend on how much icing you want to make. Start with a cup of sifted sugar, a bit of milk, butter and vanilla, and go from there.
